Long time Globe and Mail columnists Lucy Waverman and Beppi Crosariol have recently combined their respective loves of food and drink to produce "The Flavour Principle," a global gastronomic journey and one of the best cookbooks Canada currently offers.

The Flavour Principle contains over 30 creative menus, each organized around one of 11 core flavours such as earthy, sweet, herbal and umami. The notes preceding the recipes have a conversational, humourous tone while the recipes themselves produce flavour extravaganzas: caramel-pecan sea bass with cranberry wine sauce and shallot and brussels sprout compote form part of one holiday feast.

Crosariol thoughtfully pairs each dish with a wine and also offers advice on how to stock a bare-bones bar. Food and drink come together even more beautifully when enhanced by Ryan Szulc's mouth-watering photos. An excellent gift for any home cook who wants to tour the world through taste.
